Grilled Fingerling Potatoes
Simple, yet incredibly delicious! Â Fingerling potatoes are a smaller version that cook up quickly, but pack a ton of flavor. Â When they are grilled they become crispy on the outside while remaining tender on the inside. Â Pair these with mussels for flare, burgers for comfort, or one of many other savory combinations. Â These fingerlings are the perfect side dish, and healthier than french fries, as they are a thicker cut and are grilled, not fried, so there is less oil that will be absorbed. Â There are also an endless number of variations to this recipe just by adding extra herbs or spices, such as thyme, oregano, cumin, chili powder, and other common ingredients. Â I grew up on meat and potatoes and this recipe is simple and delicious. Â We hope that you enjoy this recipe as it will be a hit with anyone you share it with.

Grilled Fingerling Potatoes
Ingredients
- 1 lb fingerling potatoes, (sliced lengthwise into halves or 4 wedges)
- 2-3 quarts water
- 2 tbsp olive oil, (extra virgin)
- 1 tbsp paprika
- salt
- black pepper
Instructions
- Heat grill to 350.
- While grill heats, bring 2 quarts or more of water to a boil and add some salt.
- Once boiling, add potatoes and boil for 10 minutes.
- Strain potatoes and put in a bowl.
- Add olive oil, paprika, salt, pepper, and any other herb that you would like, such as thyme, cumin, etc.
- Once grill is hot, place potatoes on grill and cook for another ten minutes. The potatoes are finished once a fork presses into the potato with ease.
