Moules Frites / Mussels & Fries

Â This Moules Frites recipe takes the classic elements of the Belgian mussel recipe and incorporates some Asian flavors of red miso paste, star anise, and soy sauce. Moules Frites / Mussels & Fries
Ingredients
- 2 lbs mussels, Casco bay mussels if available
- 1.5 cups water
- 1 - 1.5 cups amber beer
- 1 chicken stock cube
- 1 spoonful red miso paste
- 1/2 - 1 tbsp soy sauce
- 1 key lime, or 1/2 regular lime
- 1 tsp thyme
- 1 tsp red pepper flakes
- 1 tsp celery seed
- 1 star anise
- 2 green onion, sliced
- fresh dill, garnish
Instructions
- Bring water to a boil then add chicken stock cube and stir until dissolved
- Stir in red miso
- Bring to a simmer and add soy sauce, red pepper flakes, celery seed, thyme, and the star anise
- Add beer
- Simmer for 5-10 minutes
- Add in Mussels, cover with lid, and raise heat to high
- Cook mussels for 5 minutes
- Turn off heat and remove lid
- Serve in a bowl and top with fresh dill
