Last-Minute Egg Bake

Last-Minute Egg Bake: For When You're In a Scramble

Ingredients
 

  • 10 eggs
  • 1 cup ham, roughly chopped
  • 1.5 cups shredded mozzarella cheese
  • 1/4 onion, diced
  • 2 garlic cloves, minced
  • salt, to taste
  • olive oil, as needed
  • butter, to grease the baking dish

Equipment

  • 1 9×12 baking dish 9×9 will work too
  • 1 medium saute pan
  • 1 whisk

Instructions
 

  • Heat an oven to 190 C or 375 F.
  • Dice the onion and mince the garlic.
  • Onions and garlic for the last-minute egg bake.
    In a saute pan heat a small amount of olive oil over medium heat and add the onion and garlic. Cook for 3-5 minutes until soft, but not burnt.
  • Eggs for a last-minute egg bake.
    In a large bowl break open the eggs, add a pinch or two of salt.
  • Whisked eggs for an egg bake.
    Mix with a whisk until the egg yolks are broken and blended.
  • Take the butter and grease the baking dish.
  • Pour the eggs into the baking dish.
  • Mozzarella cheese and ham are added to the last-minute egg bake.
    Add the ham, mozzarella, onion, and garlic.
  • Once the oven reaches 175 C / 375 F place the baking dish on the middle rack.
  • After 35 minutes the last-minute egg bake is complete.
    Cook the egg bake for 35 minutes.
  • If you desire less browning you can cook for 40-45 at 350F or 175C.

    Let cool for 5 minutes and then with a sharp knife cut the egg bake into 12 squares. Pack it up and head to the potluck!
