Simple, yet incredibly delicious!  Fingerling potatoes are a smaller version that cook up quickly, but pack a ton of flavor.  When they are grilled they become crispy on the outside while remaining tender on the inside.  Pair these with mussels for flare, burgers for comfort, or one of many other savory combinations.  These fingerlings are the perfect side dish, and healthier than french fries, as they are a thicker cut and are grilled, not fried, so there is less oil that will be absorbed.  There are also an endless number of variations to this recipe just by adding extra herbs or spices, such as thyme, oregano, cumin, chili powder, and other common ingredients.  I grew up on meat and potatoes and this recipe is simple and delicious.  We hope that you enjoy this recipe as it will be a hit with anyone you share it with.

Grilled fingerling potatoes are crispy on the outside and tender on the inside. These potatoes make for the perfect companion to your main dish are pretty quick to make. The thicker cut and cooking on the grill are a healthier option that will absorb less oil than frying.

Grilled fingerling potatoes
Instructions
  1. Heat grill to 350.
  2. While grill heats, bring 2 quarts or more of water to a boil and add some salt.
  3. Once boiling, add potatoes and boil for 10 minutes.
  4. Strain potatoes and put in a bowl.
  5. Add olive oil, paprika, salt, pepper, and any other herb that you would like, such as thyme, cumin, etc.
  6. Once grill is hot, place potatoes on grill and cook for another ten minutes. The potatoes are finished once a fork presses into the potato with ease.
