Moules Frites / Mussels & Fries in a Miso Beer Broth
Mussels in a broth are a quick and simple combination that pack a ton of flavor. And the combinations are actually quite endless. And when mussels are found on the appetizer menu you are likely to get a tasty beer or white wine broth. This Moules Frites recipe takes the classic elements of the Belgian mussel recipe and incorporates some Asian flavors of red miso paste, star anise, and soy sauce. Mussels in a beer or white wine broth pack a ton of flavor as the mussels soak up the different seasonings in the broth. Here we add some asian elements of red miso, star anise, and soy sauce to further enhance the flavors.

Ingredients
- 2 lbs mussels Casco bay mussels if available
- 1.5 cups water
- 1 - 1.5 cups amber beer
- 1 chicken stock cube
- 1 spoonful red miso paste
- 1/2 - 1 tbsp soy sauce
- 1 key lime or 1/2 regular lime
- 1 tsp thyme
- 1 tsp red pepper flakes
- 1 tsp celery seed
- 1 star anise
- 2 green onion, sliced
- fresh dill garnish

Instructions
- Bring water to a boil then add chicken stock cube and stir until dissolved
- Stir in red miso
- Bring to a simmer and add soy sauce, red pepper flakes, celery seed, thyme, and the star anise
- Add beer
- Simmer for 5-10 minutes
- Add in Mussels, cover with lid, and raise heat to high
- Cook mussels for 5 minutes
- Turn off heat and remove lid
- Serve in a bowl and top with fresh dill
