Mussels in a broth are a quick and simple combination that pack a ton of flavor.  And the combinations are actually quite endless.  The restaurant Flex Mussels in New York City offers 20 different combinations of broth, seasonings, and mussels alone finding every one that we have tried to be delicious.   And when mussels are found on the appetizer menu you are likely to get a tasty beer or white wine broth.  This Moules Frites recipe takes the classic elements of the Belgian mussel recipe and incorporates some Asian flavors of red miso paste, star anise, and soy sauce.  These ingredients uniquely enhance the dish for a fresh take on Moules Frites.  You can find the “frites” or fries recipe here: Frites Recipe

Moules Frites / Mussels & Fries Yum
Mussels in a beer or white wine broth pack a ton of flavor as the mussels soak up the different seasonings in the broth. Here we add some asian elements of red miso, star anise, and soy sauce to further enhance the flavors.

Instructions
  1. Bring water to a boil then add chicken stock cube and stir until dissolved
  2. Stir in red miso
  3. Bring to a simmer and add soy sauce, red pepper flakes, celery seed, thyme, and the star anise
  4. Add beer
  5. Simmer for 5-10 minutes
  6. Add in Mussels, cover with lid, and raise heat to high
  7. Cook mussels for 5 minutes
  8. Turn off heat and remove lid
  9. Serve in a bowl and top with fresh dill
