Ultimate Turkey Burger
Turkey burgers can be bland or dry, so it is important to add ingredients that bring out the best flavor in the turkey. Although it may sound unusual, adding anchovy paste and soy sauce is a great way to add umami flavor (that salty, briny taste that makes so many dishes delicious). On top of that mixing in harissa adds earthiness and a little spice. Because we like heat we roast jalapenos on the grill along side the burger and use as a topping, along with onions, red bell peppers and tomatoes. A fresh sourdough toasted on the grill serves as the perfect bun for this towering turkey burger.

Ingredients
- 1 lb ground turkey
- 2 tsp anchovy paste
- 2 tsp soy sauce
- 1 tsp garlic salt
- 1 tsp black pepper
- 2 tsp harissa
- 1 tsp cumin
- 1 tsp turmeric
- 1-2 tbsp olive oil
- fresh loaf of sourdough bread for buns
- shredded cheddar cheese
- 2 jalepenos sliced in half, seeded
- 1 red bell pepper sliced in half, seeded
- 1 yellow onion sliced
- 16 grape tomatoes (or mini marzanos)
- ketchup
- brown spice mustard
- mayo

Instructions
- Add turkey, soy sauce, anchovy paste, harissa, garlic salt, and black pepper to a bowl. Mix with your hands to distribute evenly.
- Form 4 patties from this mix and place on a plate or tray
- Top the patties with cumin, turmeric, and olive oil
- Cut sourdough into bun size slices
- Heat a grill to 200 degrees, then add the jalepeno, bell pepper, and bread. Cook for 5 minutes, watch bread so that it does not burn.
- Remove the bread, but keep the peppers on
- Add the patties and onions and cook for 3 minutes, grill should be closer to 350 by now
- Flip the patties and cover with shredded cheddar cheese, then add the grape tomatoes
- Cook for 3-5 minutes, until the cheese is melted
- Remove everything from the grill and turn off
- Cut the jalepeno and red bell pepper halves in half again, so that you have a slice for each burger
- Prepare the burger: Apply mustard to bottom bun Then onions Then tomatoes Then turkey patty Then jalepeno Then red bell pepper Then apply ketchup and mayo to top bun and top off the burger
