Easy Grilled Squid and Peppers
Grilled squid is surprisingly easy to cook and super flavorful! Add is some grilled shishito peppers and you have a spectacular meal in minutes. Squid is commonly grilled whole in southern European countries such as Portugal and Spain. It is amazing that squid is not used more frequently other than in fried calamari, which is also delicious. There are two great ways to cook squid, fast on high heat, and over a long period (30 minutes plus). Cooking in between will result in chewy squid, which we do not want. Here we take the fast and high heat approach for incredibly tender and smoky squid. We coat the squid in simple seasonings letting the grill supply most of the flavor. By limiting the grilling time the squid retains its moisture. Grilled peppers, such as shishitos or cubanelle, make for the perfect side.
Easy Grilled Squid and Peppers
Ingredients
- 1 lb squid - mix of whole tubes and tentacles
- 1/2 lb shishito peppers, or 2 cubanelle peppers
- olive oil
- salt
- Meyer lemon
Instructions
- Pat squid dry with paper towel
- Season with maldon salt
- Drizzle olive oil on top of squid and rub all over
- Drizzle olive oil on top of peppers and rub all over
- Heat grill and wait until very hot
- Take a veggie grill basket and set on grill
- Add the peppers and cook for 5 minutes
- Put the squid tubes directly on grill
- Push peppers to one side of grill basket and put tentacles in grill basket
- Flip tubes and toss tentacles after 2 min
- Grill for another 2 minutes then remove (total time 4 minutes)
- Mix the juice from half of a Meyer lemon with olive oil and spoon a little on top
- Sprinkle some Maldon salt on top and serve
