Saffron Fusilli Pasta with Lobster

Fresh, homemade pasta is simply delicious and whenever we get the chance we go the extra mile to make some.  There are two types of homemade pasta, fresh and dried.  When we made this saffron fusilli pasta with lobster dish at home we made our own dried pasta two days before, which you can find here.  If you are short on time, you can use store bought saffron pasta, but the saffron is essentially as it enhances the flavor of the seafood.  We chose lobster for this dish as the meat has a nice sweetness.  Once we grill up the lobster and toss everything together in our lush and savory seafood sauce we ended up with fantastic seafood pasta dish with all of the ingredients in perfect harmony.

Instructions
Grill Lobster
  1. Cook lobster at most 4 hours in advance, refrigerate after cooking.
  2. Cut lobsters down the middle and split.
  3. Clean out guts so that only meat remains.
  4. Heat grill until hot, and then grill cut side up with a tbsp of butter inside each half.
  5. Grill for 10-15 minutes until flesh is firm and shell is red.
  6. Remove meat from lobster and reserve in bowl.
Cook Saffron Fusilli Pasta
  1. Heat large pot with water over high heat and season with salt, until boiling.
  2. Add the pasta and cook for 5 minutes.
Make Seafood Sauce
  1. Heat sauce pan over medium heat
  2. Melt 2 tbsp butter
  3. Cook shallot until soft
  4. While the pasta cooks, add chartreuse, saffron, and anise star over medium high heat for 4-5 minutes until liquid thickens
  5. Add tomato(es), lobster, butter, fish stock/lobster or shrimp bouillon cube, and herbs. Toss to combine all ingredients.
  6. Add pasta and a 2-3 scoops of pasta water, toss for another 2 minutes to combine.
  7. Serve warm.
