Instructions
  1. Heat deep pot on medium high for 2 minutes
  2. Add olive oil and heat for 1 minute
  3. Add garlic and onion, cook for 5 minutes until soft and starting to brown on the edges
  4. Add andouille sausage, salt and pepper, cook for 5 minutes
  5. Add tomatoes and tomato sauce, cook for 5-10 minutes until bubbling
  6. Add bay leaf, paprika, parsley, and cook for 5 minutes
  7. Add mussels, beer, and water
  8. Cover and cook for 5 minutes until the mussels open up
  9. Turn off heat and keep covered until ready to serve
