Coconut Cod w/ Mango Salsa

Coconut Cod
  1. Mix coconut, parsley, paprika, celery seed, salt, and black pepper on a plate
  2. Take the cod fillets, pat them dry with a paper towel, and then coat both sides with the coconut breading
  3. Heat a pan over medium high heat for 2 minutes
  4. Add coconut oil to the pan
  5. Once the oil is hot add the cod to the pan and cook for 3-4 minutes on each side
Mango Salsa
  1. Add all of the ingredients for the mango salsa in a bowl, except for the dill
  2. Mix the ingredients so that they are all evenly mixed together
  3. Place the mango salsa on top of the cod, and garnish with the dill
