Portuguese White Rice

This dish is all about the layers of flavors and gently cooking each ingredient. A simple, easy method for mincing onion is to first cut the onion in half lengthwise from the root to the top. Peel the outer onion skin. Place the onion half cut side down, make narrow cuts starting near the root but not cutting all the way through. A sharp knife works best here. Continue making these cuts until the entire onion half contains these cuts. Then turn the onion half 90 degrees and make narrow cuts from the top of the onion down to the bottom. In doing so you have a quick, uniform mince of onion. The same can be done with the garlic. Using this technique is super beneficial in making consistently sized small cuts of these ingredients.

Portuguese White Rice – A Perfect Side

Portuguese White Rice – A Perfect Side

Ingredients
 

  • 1 1/2 cups white long grain rice, such as Carolina
  • 1/2 medium yellow onion, small dice
  • 2 garlic cloves, minced
  • 2 tbsp olive oil, higher quality olive oil will improve the rice
  • 1/4 cup dry white wine, such as sauvignon blanc
  • 2 1/4 cups water

Equipment

  • 1 fine mesh strainer to rinse the rice grains
  • 1 medium size pot with a lid

Instructions
 

  • Measure rice and place in fine mesh strainer.
  • Rinse the rice under cold water for 1-2 minutes, until it runs clear.
  • Turn off the water and let the rice drain.
  • Heat the pot over medium heat.
  • Add the olive oil to the pot. There should be a nice layer of oil over the bottom of the pot. Add more oil if necessary to achieve this.
  • Once the oil is warm (shimmering), add the onion.

    Cook the onion for 4 minutes, if browning begins lower the heat. We do not want the onion to brown.
  • Add the garlic and cook for 2 minutes.
  • Add the wine and cook for 2 minutes.
  • Add the rice, stir and cook for 1-2 minutes.
  • Add the water, stir the rice, and cover the pot with the lid.
  • Increase the heat to bring to a light boil.
  • Once boiling, reduce the heat to low, keeping the pot covered, cook for 11 minutes.
  • After 11 minutes, turn off the heat and remove the pot from the hot stove top.
  • Keep the pot covered until ready to eat.
  • Perfect Portuguese White Rice
    Fluff the rice with a large spoon and serve.
