Fresh, sustainably raised ingredients is a trademark of the northwest cooking mentality.  While in Seattle for a couple of weddings we received locally produced honey as the favor from one of the weddings.  We also experienced incredible meals featuring seasonal ingredients, such as Shishito peppers, that were new to us and left us inspired to create our own recipes.  Looking to craft a great meal with a meat and the honey we were gifted we scoured the Union Square Farmer’s Market in NYC and came up with this Honey Roasted Rosemary Chicken recipe.  Enjoy!
