Ingredients
Instructions
  1. A day before, prep duck breasts (at least 2 hours before will work as well)
  2. Coarsely chop rosemary and thyme
  3. Lay out a sheet of saran wrap for each breast and lay each breast on top
  4. Salt and pepper liberally and add rosemary, thyme, and cayenne to meat
  5. Spread evenly
  6. Wrap up breasts and place in fridge until ready to cook
  7. On the day of cooking:
  8. When ready to cook heat oven to 400 deg F
  9. Place oven safe pan on stove top
  10. Take out duck breasts and unwrap, remove cayenne peppers
  11. Add salt and pepper to fat side
  12. Place duck breast fat side down in pan and turn heat on to med low (level 4 of 10) for 10 minutes
  13. Turn up heat to medium (level 6 of 10) for 2 minutes
  14. Turn up heat to high (level 8 of 10) for 3 minutes
  15. Take duck breast and flip over to meat side and cook for 3 minutes
  16. Turn breast back over so fat side is down and put pan in oven
  17. Cook for 5 minutes
  18. Remove and place on cutting board
  19. Take pictures for bragging rights
  20. Let sit a total of five minutes
  21. Cut slices at an angle
  22. Take more pictures
  23. Use the leftovers drippings to make a sauce
